Creamy Chicken and Potato Soup

Even though the weather is starting to warm up, soup is always a good dinner. So today I wanted to share a really easy soup recipe that I make a lot.

Creamy Chicken and Potato Soup



2 Tbs butter
1 head of broccoli
1/4 cup chopped carrots
1/4 white onion
1 chicken breast
2 small potatoes
2 cans cream of chicken
1 can of chicken stock
1/2 cup water

Peel and cut your potatoes and the rest of your vegetables. Cut your chicken breast into bite size pieces. brown your chicken in 2 Tbs of butter. Add your vegetables and cook until they are some what soft. Add your chicken stock and water. let it simmer for 3 or 4 minutes, then add your cream of chicken. Bring to a boil and adjust the consistency with milk. Let the soup simmer for 10 minutes. Salt and pepper to taste. Serve with crackers and cheese on top if desired.

This recipe is great because it's so quick and it's really yummy. It's also pretty easy to add or take things out that you want or with what you have around your house. Enjoy!
